I've found that only the cable that came in the box works

You mean the USB C cable?

Any good quality cable should work, unless of course the manufacturer of that mouse did something with the connector that isn't up to USB spec.

To rephrase, I don't know if its just a usb 3, a 3 gen 2, a 3 gen 2x2, etc and was wondering if anyone tested it so I can buy one that works.

Yeah looks like its just typical USB 2 Type C. Don't even think of the data bandwidth or power, its standard 10W charging and most mice only transmit at worst 1 megabyte per second which any Type C cable can do.

In case of a cable for a mouse it really doesn't matter.

Here are the current standards:

05Gbit/s - USB 3.2 Gen 1 (USB 3.0, USB 3.1 Gen1)
10Gbit/s - USB 3.2 Gen 2 (USB 3.1, USB 3.1 Gen2)
20Gbit/s - USB 3.2 Gen 2 x 2

40Gbit/s - USB 4

As SorryBella mentioned, your mouse won't even need the 5Gbit/s that USB 3.2 Gen 1 offers. Any USB C to A or USB C to C cable should work just fine.
