I love how the thing under your name says "buy AMD" but your main rig you have listed in your signature has an intel CPU and GPU 😂 

 

Anyways, back to the question: I think a 2-fan 6700xt will be fine. As long as you don't overclock it or put it in a case with only 1 fan, it shouldn't overheat at all. 

 

Also, remember that the 6650 XT is a bit cheaper and has similar performance, it's a great budget option, however, the 6700xt is better if you aren't on a strict budget.

I don’t know what my average fps is, but in MC I probably get around 60fps?? Rocket league and Fortnite both get around 30fps, with RL getting a bit more fps. That’s just a guess and I don’t have software I use to monitor frame rate. My monitor is overclocked to 170hz and it’s 1440p.

I am saying that you are getting good frame rates for a iGPU and i am surprised because if you are getting frames that high you probably aren't on the best-looking settings for graphics for example, you aren't running anti-aliasing or ray tracing. or shaders or other mods in mc.

I was just able to get 120fps at 170hz 1440p in Minecraft 1.18.2!!!
