Network Help.. Looking to switch to wired

I currently have my network setup through the WIFI on my ISP router.  Now that I have added a few more devices to my WIFI I noticed that the speeds are not as nice as I was hoping.  I was thinking about moving everything to wired network except a few devices.

I have 2 PCs in my kids room, 2 PCs in my dining room and 1 in my living room.

A ) I was thinking about setting up the network with each room having it's own desktop switch and those switches then plugged into my router. or

B) second option I was thinking about setting up with each room having it's own desktop switch.  Those switches then plug into another switch which is then connected to the router.  My thought process here is that if my router goes down I will still have my internal devices still able to communicate and play on local servers.

I have never setup a local network before so I appreciate any feedback. Let me know if I am over thinking this or if I am way off,

Thanks for any help.

Id just connect all the room switches into the router. The router has a switch built into it. All those lan ports on a router(well almost all home routers work this way) are connected to a switch internally. That switch is connected to the router part of the rotuer. You can still communicate with other local systems if the internet goes down, as the router will still have all its local functions working. If your added the switch, you still need your router running for many local operations like dhcp.

Can I use normal Ethernet from the switch to the router or do I need a crossover cable?

Use normal ethernet for everything these days. Crossover over cables aren't needed for anything as auto-mdix is included on almost any modern device.
