PC random restarts/freezes.

I have been having this issue for months now. While playing a game (any launcher) or downloading a game on steam my PC just restarts.
Radeon reports that the settings were reset and the Armory resets the Fan Xpert settings.
I am unable to 100% recreate the issue every time but I do notice when I alt-tab from one monitor to the other it happens often. But can happen without that aswell.
Event viewer and reliability history only show unexpected shut down.

My specs:
Mobo: Asus TUF GAMING B650-PLUS WIFI
CPU: Ryzen 7 7700X
GPU: Gigabyte Aorus RX 6900 XT Master
RAM: 2 x Kingston KF552C40BB-16
Storage: Samsung EVO 980 and WD Green 1TB HDD
PSU: NZXT C850 
Cooling: NZXT Kraken X53
Case: Cooler Master TD500 Mesh
Monitors: Mi Curved Gaming Monitor 34" and LG UltraGear 27GN650-B
Soundcard: Focusrite Scarlett Studio Solo
OS: Win 11 Pro

So the current specs are actually full change to the configuration I did due to the issue I have been having:
So i swapped from AM4 to AM5, everything else is from the old AM4 build when issues started
Tested with 2 other PSUs MSI MSI MPG A750GF and with Asus Thor 1200W Platinum II.
Tested with another GPU RTX 3060 Ti.
DId Multiple OS reinstalls with old and the new build. Both Win10 and Win11.
Bios and all possible drivers are up to date and also tried older reliable versions that were mentioned around on forums.

Only thing that I have left questioning is the Monitor combo Ultrawide + a normal monitor due to the resolution differences, PC Case fans maybe causing a short or something or the AIO.

Past that I do not know what else is left to troubleshoot as I do have some experience in PC building and troubleshooting.

run it with a single ram stick. try each stick alone in the machine

Tested, the build is new as mentioned went from AM4 to AM5 so RAM was replaced. But tested single stick on old build aswell.

so you ran the new build with one stick?

Yup since when components arrived only 1 stick got here so I had to wait for the second one for a few days.
With that I mean the AM5 build
