If i had 400-500euros rn and the prices here in greece are like RX 6700 XT 420euros, RTX 3060 Ti 500euros. What would you guys recomend for 1440p gaming? Using an 8core first gen ryzen cpu. Also i dont know about the new amd and nvidia gpu mid tier launches but i think theyll be overpriced in my country. Obv if the mid tier ones like 4060 or 7600 or 7700 are in that price range ill act accordingly.

What's your current GPU? 1st gen Ryzen could bottleneck 6700XT/3060 Ti if you play high fps game imo.

With that CPU you have a 6700XT would perform like a 6500. You need to upgrade your CPU first.

Which motherboard do you have? Flash the latest bios, then install a Ryzen 5 5600 or Ryzen 7 5700X and then upgrade the GPU.

As for the original question, the 6700XT and 6750XT are RTX 3070Ti competitors, not RTX 3060Ti competitors, the 3060ti is noticeably weaker.

For the love of God... stop with the 3060. Please guys, just look up on youtube how it compares to the 6750XT or even the 6650XT. The 3060 should be NO MORE then $200 (€185). Don't think of it as a GTX 1060 or 1660, it's more like GTX 1030 level of performance compared to the rest of the current stack. Also as mentioned above, upgrade the CPU first or there will be no point of new GPU. Also if you have something like GTX 1070/1070Ti/1080/1080Ti, just don't bother with any of these. Use it until the prices go back to normal.
