I have Windows installed on a SATA SSD, but I have a few HDDs and three M.2 drives in RAID 0 (two separate volumes) for game storage and media storage. I am currently on a Tuf Gaming X570, and I'm going to be upgrading to an Aorus Master X570. If I enable RAID mode in the BIOS, will I still keep all of the data stored in the RAID volumes? Or will I have to rebuild the RAID volumes and put the data back on them manually?

You cannot move Raid 0 between motherboards. You will have to back up the data and start a new Raid Array. This is the big downfall of RAID arrays, you pretty much cant move them. Youll have to get a External HDD or something.
