You mean change the keycaps with other keycaps? if you can find one that fits it, yeah I guess. Gonna be hard to find though I think.
Standard profile keycaps probably won't fit. Or atleast won't fit well without some DIY

As for switch :
I dunno about K621, but my K618 is hotswappable yeah.
Seems to me that K621 is simply a TKL version of K618, but better ask their CSR to be sure.

I have to inform you some things though :
- My K618 uses a redragon proprietary switch they called "Redragon Ultra Low Profile", it is Outemu. No other brand's switch match it, so you will have to buy from redragon for replacement switches. K621 most likely uses the same kind of switch.

- Don't take the Brown switch

- The keyboard keys profile is low, lower than cheap Logitech membrane keyboard (it is pretty much same profile height as Logitech G915)

not the switches, I am wondering if you can swap the keycaps for normal instead of low profile

I'd try on my K618 for you but I don't have good quality standard profile caps.
So, I can only try with a keycap I got from buying a mechanical switch tester, one that are like in this link :

It's a bit wobbly because the stem of the caps can't go into the switch stem all the way. IMHO, solvable by DIY, but yeah it will be quite a chore.

Purple Arrow shows there's a bit of gap, the stem of the caps doesn't go into the switch's stem all the way in.

anything that has the media keys, doesn't have macros and isn't low profile keycaps?

I'm not a fan of keychatter. I've had a  Redragon keyboard before and even swapped out the switches for Gateron reds. Still had horrible chatter.
Only considering the price, you could look into the Blitzwolf kb2 optical, hot-swappable, gateron mechanical keyboard., European brand. You can find them on Banggood, aliexpress, and the main website.
