My PC crashes at least once a day, I thought all parts were well together.

I had 4x4gb of RAMen 1 stick died so Ipulled that out, then it was VERY unstable so I pulled out another and now it is still unstable but, not as bad.

Are dual channel kits meant to run with all four sticks? I would think it should be fine running just 2. Maybe it's RAM timings?

Does the PC crash with a BSoD, if so, I would ask you to upload the dump file (Located in C:/Windows/minidump). This will make it much easier to see what's wrong.

You PC should work with 2 and even with 1 stick of RAM. You can test the RAM using Memtest86+. Let it run for 4-6 passes and look for errors.

Edit: Also try to clear the CMOS. It might just be that the BIOS need a resetting after you removed some of the RAM
