What should I upgrade?

I was looking for an upgrade, maybe for christmas or my birthday (22nd feb)

If you're gonna be waiting this long, the recommendations we make now really won't matter at that point. AM5 will be out and prices might come down by that point, 13th gen Intel will be out and by your birthday the low end -K SKUs should be released, and AMD might've decided to actually release Ryzen 7000 CPUs on the AM4 socket (they have said they thought about doing that, whether or not they will is a different story). There's enough that would change by then that we really can't tell what the best option would be.

Budget (including currency): ~£300

Country: England

Games, programs or workloads that it will be used for: Heavy gaming on BeamNG and modded Assetto Corsa

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): I have a 27” 1440p 144hz Samsung monitor and my PC is a prebuilt Aldi system with a 2060 super mini and i5-10400, power by a MEDION 550W PSU. I have 3TB of storage, 1TB NVMe and 2TB HDD. Ive since swapped the case to a Lian Li Lancool II mesh C and it runs nice and cool.

Edit: I also run 2x 8GB sticks of RAM (although im not sure what brand it is as its a prebuilt).

I was looking for an upgrade, maybe for christmas or my birthday (22nd feb). I was considering a motherboard and CPU upgrade to something on the AM4 platform, maybe a 5800X or 5800X3D. My current motherboard lacks features as it only has the prebuilt system in mind, and a new board be great. My CPU cooler isnt a stock 10th gen i5 cooler but its not the best.

Peripherals arent really an issue, I was considering a new mouse, maybe a razer deathadder or some other clean looking white mouse, im open to suggestions. I might even get a 40 series GPU when the lower end cards are out, the 4060 or 70 would be great.

Does anyone have any suggestions that keep within my budget that would make a considerable difference to my system? Maybe a new CPU cooler like the vetroo v5? Im open to suggestions, thanks in advance.

thanks, i’ll probably wait til 13th gen and maybe get a new board, cpu and PSU and see what prices are like then, maybe try for 12th gen i5K or AMDs 5000 series.
