Audio output quality drops drastically whenever my headphone's mic is being used (video of issue) included

TEAM WORM

You can really hear it the first time I join a call. There are weird gaps in the recording the other times the quality switches. I don't understand what the output panel is showing me tbh. This happens with other audio devices as well. Doesn't matter if discord is using my mic or OBS. I am on Windows 11, drivers were updated.

Strange... Have you tried another headset on the same system? I am just thinking that maybe your headset is short-circuiting.

If this is through Bluetooth it's normal, any time you use the mic it switches to "call" mode with crappy mono audio.

As Kilrah said those are wireless and probably what he described happens, try using a wired headset and tell us if you had any difference using them.

I can use a wired headset without this issue...but I want to use my nicer Bluetooth ones.

I'll be honest I don't know how to answer that besides just linking it https://www.amazon.com/Logitech-Receiver-Wireless-Gaming-Headset/dp/B074VFVR89/ref=psdc_229575_t1_B01MXE0FKC

Yep so you had a gaming headset that has its own dedicated RF transmission system... those exist precisely to work around the limitations of Bluetooth.
