Why does 120hz look softer than 165hz

So when I set my display settings (with the Nvidia display settings) to 1080p, 1920x1080, (native) 120hz my display looks so much softer (and in my opinion nicer) than when I set it to 165hz (under the PC section  of the Nvidia display settings)

 

Why is that? I didn't know that the refresh rate can effect the colour smoothness of the monitor.

 

I have a 165Hz display from Dell
