I a looking for a switch that is clacky, I want it to be stock or pre lubed, I want it to be stock/pre lubed and clacky, not poppy, clacky

By clacky do you mean linear?

 

Is there a certain sound profile you're aiming for that you could link?

Sound profile has more to do with case, plate and dampening that the switches do. Caps also play a not insignificant role. 

 

If you want that kind of sound I'd recommend an aluminum plate and use PE foam for dampening. Also look into the tape mod. (basically lining the back of your PCB with painters tape)

aluminum plate comes with the gmmk pro, pe foam I believe they use it for packaging, painters tape, I can buy.

it sells 2 types, chocolate POM and normal creams, is there a difference, which one should I get?

Doesnt matter, its just the colour of material - both are made of POM

would something like a PC plate or POM plate not be quieter?
