I will use the gpu on my current rig until the prices drop a bit, its a GTX 560, the motherboard I selected should work with it.

I have 0 interest in RGB and overclocking, but would prefer a system as silent as possible and with good airflow (preferably a case with filters i have a cat)

I have extra sd that i will use, so no need for extra storage.

I'd look into the 12600k. It's normally around the same price and has more cores, although it is 6p + 4e.

Go for at least 1 TB, they are faster than their smaller counterparts. Also, games/programs are getting pretty big.

It should feel smoother (better frame times, pacing and 1% lows) in games because all the background task will be handled by the e cores, which leaves 6 p cores for just your game. In terms of average frame rates though, it should be similar.

you should notice a fairly good bump in frames

 

in some cases, the 12600k's low 1% were higher than the 5800x's average
