For most of those games, the 8600K will do well. It's modern multiplayer titles like Battlefield and Warzone that gives the 6c/6t parts trouble. If you really want to push framerates, you'll want to overclock it, but you shouldn't have stuttering issues in those types of games with a 1080/Ti.

The 8600K, having only 6 cores, will start to show its age especially in games that are able  to utilize more cores/threads. Having said that, it will OC to 4.9/5.0 GHz on all 6 cores and paired with a 1080/Ti you should get reasonable performance out of it.
