If you need to underclock it sounds like you're clocking your card too high. Clock it down further until it doesn't crash, then inch it up from there until it crashes. You find the highest clock your card can handle around that point.

What about your clock speeds? It's kind of meaningless to up your voltages if you aren't upping your RAM or GPU Hz, so I'm guessing you raised those and need to lower them. If your CPU is overclocked that might be causing a crash too.

No... Voltages control the power that your card consumes. If you increase the voltage it will take more power from your PSU.

Clock speeds control the speed of your GPU. The VRAM speeds controls the speed of your GPU's memory.

Generally you increase your clock speed until something crashes. The next step is to increase the voltage a little, since giving your GPU more power will allow you to increase your clock and VRAM speeds. You repeat this until the card runs too hot, since increased voltages introduce the most amount of heat.

You probably just need to disable the control center somehow or disable the overclocking utility and get your card to run at completely default settings. If your games still crash then reinstall the drivers. If it crashes after that you may have a faulty card. Messing with the voltage is a little tricky, and I don't think the Catalyst Center lets you increase it to the point that you can fry the card but it's something to be wary of.
