First NAS build

I would like to build a NAS to use mostly as a plex server, and also for some desktop backups. I would only need to be able to stream on one device at a time at 1080p. This would be my first time building a NAS server.  Could someone please recommend a good build for this use case? Budget is $300-350.

New or used?

 

Id probalby go pentium, basic board, case with lots of drive bays, 8gb of ram.

 

What os? Id probably go unraid if you want easy expansion.

Drives would be in addition to the budget, and I would prefer to do a new build. I am open to trying unraid for the first time for the OS, was curious what sort of advantages that would afford over using windows for an OS.

How many drives and what capacity?

 

Unraid is nice as it lets you mix drives easily, gives you a good webi nterface, and is just pretty easy to use.
