How to view contents of another boot drive from a boot drive currently in windows?

Just installed an nvme ssd, and wanted to grab my documents folder and other things from my previous drive.  I should also say they are both labeled C, but different names.  I can't see it in diskpart, which I assumed, but is there a way to change it to a data drive instead of a UEFI drive?

Nope, not even in the boot menu.  I reset the boot keys btw(followed an m.2 tutorial)

Easiest way is to use external usb adapter, you can access an old boot drive like any external drive that way. Of course it would probably have been better to clone the drive in the first place (not sure why you didnt)

 

Just in case its unclear this is all you need, 2.5 drives dont need an enclosure as theyre simply running with usb power:
