If you wait for GPUs at MSRP, you can get a 3060ti.

if you buy ATM i'd suggest a used GPU, you can find a GTX 1070 - 1070ti at a decent deal for 400 if you look hard enough.

The 11400F is significantly faster than the 2600.

Unless you're getting a good deal on some used parts, the only things that make sense to buy are the SSD and case. $300 for a 1050Ti is insane, and honestly I wouldn't pay $100 for an R5 2600, let alone $180. 8GB of RAM is also barely enough for a computer in 2021 doing web browsing and spreadsheets, let alone running games. What I would do is wait a couple of weeks for the R5 5600G and run that alone.

Pretend that list has a 5600G in it, and buy that system. The iGPU should be more than enough to play minecraft and Fortnite, and it leaves a pretty good path to add a GPU later on if you find one at a good price.
