What were to happen if I were to accidentally swap the cord between two different units?

99.99% nothing.  I have a box of cables I use willy nilly.  Unless your PSU calls for a different gauge of cable, they're all pretty standard.

 

What PSU's are you swapping between?

swapping the same EPS cable between PSUs?

 

Everything from nothing, to killing things. Only the motherboard side of the cable is standard, the PSU SIDE IS NOT. 

 

swapping cables between PSUs is a BIG NO NO unless you are 100% sure they are exactly the same. Cuz otherwise dont be suprised if you kill things.

The cable between the wall and the PSU?  The electrical cable that is identical pretty much with PSU's, monitors, printers, refrigerators, etc?  Different gauges is all.  

 

I guess then for the past 30 years I've gotten lucky.

from wall to PSU its practically the same. 

 

unless you are changing between huge wattage differences, its gonna be fine.

No, the 750's cable should be completely fine handling the needs of the 850w.  Remember that the PSU is only pulling what it needs from the wall.  You're not suddenly going from 750 to 850w on that cable.  You're still using only the same 450w (for example) you were using before, which is way below the max of the cable.

I see. That's great to know. Also I found a youtube vid of a guy unboxing his Super Flower PSU from NA/SA and his cord is the same as mine so I guess I was worrying over nothing lol

Also the wire gauge used is pretty much the same on all models. 

 

A 250W supply will come with the exact same 10A cable as a 1000W supply.

 

(and even if it came with a lower rated cable even that would handle the current just fine, since those current ratings are very, very conservative, a "10A" power supply cable will handle 16A no problem. Heck even at 25A it'd still sit pretty comfortably, perhaps mildly warm. Should I point out this is not "official" advice and that it's not recommended to do any of those things?)
