You can't connect the mobile versions of Minecraft to your own server hosting the java version.

You need to use computers running Windows, macOS or Linux for that.

Regarding the server itself. Minecraft wants a CPU with good single core performance.

If your dual xeon server is more than 10 years old, it's likely too old to run a Minecraft

server without lagging a bit. Any 2nd gen i5/i7 at 3GHz or better should be fine.

Without mods, 4-8GB of RAM is also fine for 10 players.

Wait... one server for each kid?

Are you using Java edition or Bedrock edition? If you want to connect from both PC and mobile, buy Minecraft for Windows 10 (Microsoft Store)

Otherwise, you can't connect from iPads and such to a Java server, that is, unless you set it up to be cross platform. (requires plugins)

Also, for remote access:

You need to open 25565 for Java

or 19132 for Bedrock

Both require UDP and TCP

you can use whatever port you want

True, but it's easier than remembering some other port; if the kid's friend(s) want to join it's already prefilled
