GPU prices are terrible right now, but I still would say that this is a bad deal. Dell has overpriced, proprietary stuff. Also the combo is terrible and the RAM is most likely single channel

Is single channel RAM really that bad? Even is it's 32GB (was initially looking for something with 2x8gb)

Yeah it's bad. But if it's 32GB I would guess it's dual channel. Considering the market situation it's not the worst possible deal you could get but I'd still suggest looking around for better offers. The GPU and low amount of SSD space are the weakest links as you probably know.
