Usually RGB fans have 2 cables. One for the RGB that goes to the controller or motherboard and one for the power, which can be a fan header, SATA or molex. You just need to unplug the RGB header cable to disable the lights. Keep the one going to your power supply as it usually just makes the fan spin.

On the other hand, it also could be a fixed RGB fan just connected to the power supply, in that case it's for the light and spinning of the fan, then you can only fully unplug it, but the fans won't work.

sime cheap led/rgb fans use the fan power to light it up and the light cant be changed.  so you would have do find were the leds attach to the fan power and disconnected it.
