Do what feels better to you?

It'll also depend on your monitor tbh, ghosting, tearing... actual monitor/ input lag...

For example on my 60hz laptop screen I can play with 400fps and it doesn't feel laggy, and actually quite responsive,  but then this screen always feels really responsive (as long there's no issue with the application itself)

But, on my old 60hz Asus monitor, anything that's not 30,60,90fps, etc... feels incredibly laggy and stuttery,  and I see this mostly as ghosting,  but it's really just that the monitor can't handle the excess frames and it's just terrible,  but as soon I have a locked framerate with VSYNC on everything feels super smooth and snappy...

So as long it doesn't feel bad to you when running more frames than the monitor can actually display then why not?  If it feels kinda laggy and the tearing / ghosting bothers you then turn on VSYNC.

EDIT:

looking at the numbers you could try to set your monitor to 60 hz, perfect for 120fps, no tearing and it'll feel "quick", you don't even necessarily need Gsync then as long your framerates are mostly stable.
