First Time Building Rig on Own: Second Opinion Needed

Budget (including currency): $1,800-2,000 (or more depending on if I can do but I would like to get more bang for my buck and for it to last me a long time) USD 

Country: USA

Games, programs or workloads that it will be used for: heavily for graphic design, making music and videos, podcasts/streaming (hopefully), gaming (Minecraft - Cyberpunk)

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

I already have AMD Ryzen 7 5800x 4th gen 8 core for the processor and the Corsair RMX 750w 80plus white power supply. 

I would like to have two monitors I know that for sure due to all the work I am going to be doing. 

Right now I have a Microsoft surface so I would be starting from scratch. 

I appreciate any and all who help! The two different SSDs are my biggest question: do I need two different ones? Can I get away with one and get a 1TB internal hard drive? Cause I'm going to be doing a lot of projects.
