I forget what OS the thing comes with.  It used to have its own OS which might be what “pi apps” is supposed to run on. A standard Linux came out for them sort of recently.  I suspect it wil be that or pi OS.  Decent chance you won’t want to flash anything.

Not a pro, not even very good.  I’m just old and have time currently.  Assuming I know a lot about computers can be a mistake.

I use Debian Lite, one of the OSes made for the Pi. Debian Lite is nice if you run a server, the GPU and RAM isn't used much, but there's Debian Full, which is another OS for the Pi, but has a desktop environment.

The OS is called Raspbian (well, apparently they renamed it to Raspberry Pi OS): https://www.raspberrypi.org/software/
