SATA Interceptor

I need a "SATA Interceptor," a device that can read an active hard drive from another computer. We have a medical device running a DRM'd Windows Embedded with no file management.
What can accomplish this?

If you want to read an active hard drive from another computer, just use a remote desktop app.

Problem is, this is a rebranded OS. I can't install stuff. It doesn't have standard Windows functionality - just point and click menus. I can tell it's Windows 7 Embedded because I see the loading spinner at some points. The OS is completely locked down.

I need to get access to the hard drive's files without tampering internals each time.

Shut down, disconnect the hard drive, put it in another computer, create a disk image of the whole drive.

This does not exist, and it is not possible for it to exist.
