Your much better off getting 1TB SSD + a 2TB HDD for your steam library or whatever for this kind of budget, 2TB SSDS can cost a lot more than 1TB ones.

Well because of your budget it probably wont give you the best performance in "every" game but you are going to get pretty good performance in 1080p gaming in general.

 

What games do you want to play on it? Its kind of hard to give an answer to "any game".

I am building a Tower that will be used for 2 things :

 

1. 3D Animation/rendering + 1440p+ Video editing

2. Heavy Gaming : Borderlands 3 at Ultra on a 1440p 34" ultrawide monitor. COD. Rocket League. Monster Hunter World. Others.

First off all I think you'd be better off making your own post for visibility and secondly. "Heavy" gaming + 1440p 3D animation and rendering that will last you +5 years. For that I really doubt the RTX 2070 will be up to the task. I have the 2080 super and doing 3D rendering and heavy gaming at 4k is acceptable but there are definitely games I can't max and I really doubt my PC will be up-to-par for +5 years.
