How does CD and DVD writing work?

Yeah I know I may sound stupid but if I have a CD-RW how does it work and why is there 2 options when making it if I pick the burn option can I never remove the data?

But CD-RWs you can only erase fully, not partially.

How about DVD RW? and how many times can you erase?

Same for DVD-RW and DVD+RW.

I think ~1000 erases.

What’s the difference between -RW and +RW?
