Games, programs or workloads that it will be used for: Streaming, Video Editing, Gaming (like Cold War for example) and maybe VR in the future

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc): 

Some parts are already bought like the case and peripherals.

I just want to confirm the Ram (3600 or bust) and Motherboard first

This will be my new daily driver and gaming machine so also want to futureproof some parts as to not upgrade for some time

 

Also what's some alternatives for my gpu because 3070 doesn't exist

You'll want to get a 5600x rather than a 3700x. Get a better power supply. The rest is fine.

It should be okay. And get a better power supply. Something in Tier A is completely in your budget.

Cpu: 5800x is top of the line gaming cpu.

Motherboard: B550- A Pro can handle 5950x overclocked well. Decent motherboard overall. Overkill for the 5600x.

Ram: With Ryzen over 3000mhz memory is recommended. Upgraded to 3600mhz cl 16 form 3200mhz cl 16. There is not that much of a difference.

Storage: The rocket 4.0 is very good and has decent value. Should be used to store system and main games. The MP34 Ssd is great and should be used to store games.

Gpu: Rtx 3080. Good encoder for streaming and recording + somewhat decent Rtx performance and DLSS.

Case: The case has very good airflow. Paired with 6 decent fans. 1x rear exhaust, 2x top exhaust and 3x front intake.

Psu: Currently overpay but is at stock atleast. should be around 100$ for this psu. Anyway this psu is very good and can handle 3060ti and 3070 just fine.

Cooler: Also very quiet cooler cabable of cooling even 5900x easily.

Notes: Fans come with fan controller. The psu is semimodular. Cables can get tight with the P400A. The case does not support radiators on the rear or on the top. Do not get an AIO for this case. For the gpu use 2x pcie cables from the psu. Not 1x cable with daisy chained 2x8pin. Rocket 4.0 is pretty overkill, but great Ssd. 750w psu might be tight with 3080. But 5800x does not use much power. IT should be fine. You can get 850w psu is you are not comfortable.
