I'm kinda worried cause I don't want to bottleneck my system and wondering for future upgrade paths but would I need to spend more now or no

Very safe. 3070 will be overkill.

im doing game development in uni so i need to run two instances and render 3d alot i needed to go overkill cause unreal crashes too much right now

just want something "future proof"

Depends what games you're running, and how long you plan to use a 3070- Like what you just said, nothing is truly futureproof. Some games maybe struggle on dual monitors with the settings cranked and perhaps rtx on with a 3070 (E.G Control with just everything, or almost everything just set to max), but most games (presently) should be alright. Also, background tabs can affect performance a bit. 

I am NOT a professional and a lot of the time what I'm saying is based on limited knowledge and experience. I'm going to be incorrect at times.

Currently I'm just waiting for cyberpunk and watch dogs legion planning on playing rtx at 1080p and the other monitor just holds a web browser wit hyoutibe or discord nothing "intensive"

I also do play vr games like beat saber but I've been playing star wars squadrons recently, I got a windows mixed reality headset
