Cheap game server project

So I've been looking around for a cheap and fun little project to keep me busy and I thought about buying a cheap PC off of eBay like an optiplex to run a server for Minecraft or something for me and a couple of friends. How viable would this be and what sort of specs should I look for?

a i7 3770 (you can get away with i5 3570) 8gb of ram (16gb recommended)

a good enough board and psu any gpu is okay

if it was useful give it a like :) btw if your into linux pay a visit here

Building off this :
8gb-16gb, doesnt need to be a very fast speed, just do the average speed for ddr3, perhaps ~1600mhz. For the GPU, depending on what you want to do you might want to get a slimmed-down rx570-590, gtx 1650S, or perhaps a smaller 5500-5600xt, any of those should work depending on what games you want to play, also depending on the resolution, target FPS, and game settings.  

I am NOT a professional and a lot of the time what I'm saying is based on limited knowledge and experience. I'm going to be incorrect at times.
