I'm just curious tbh I've watched a few videos online (5 or 6 at best), but wasn't able to find more data. 

Well I doubt they preform well. Last I knew the Itanium line at least when they were released all those years ago, did not support 32 bit software. Not sure if Intel ever refreshed the line when they licensed the x86-64 instructions from AMD. 

I just want to sit back and watch the world burn.

they still make them(but the last gen, no new models to be announced), they have been refreshed many times.

Were they ever refreshed with the x86-64 instruction set? I remember when they were originally released in the early 2000s. They originally did not support 32bit software. They had to run 32 bit software emulated and I guess many were not impressed with them at all due to this. 

 

How do they compare to the XEON chips? 

I just want to sit back and watch the world burn.

Itatium is completely different architecture, so it never has(or was planned to have) x86_64. But all itanium chips are 64bit.

 

 

The whole idea was that this would be a whole new architecture and remove the issues of x86, but that never caught on, and chips are only being made for a few people that have stuff that only run on itanium, and can't easily switch.

 

I think performance was better at the time, its just for most people it was better to use existing software than rewrite for a faster chip.
