CPU: 3700X, GPU 2070 super.

Target: Gaming (FPS and flight sim) 1440p@144Hz and streaming.

I've narrowed the choice down to these two (max budget is €500)

27GL850 (2560x1440):

Higher pixel density (109 ppi)

34GL750 (2560x1080):

More surface area (bigger screen)

My question here is if 34 inches is too big for that resolution (32" 1080p effect) and if 27" is already big enough

Yes, it's way, way too big for 34 inch. In fact, you will start to see a significant degrade in image sharpness even at 1440p when move past 32 inch. I have tried this personally with my friend 32inch 1440p, while not too bad, it's noticably softer than a typical 27inch 1440p. 

 

Although if you only game or using it for content consumption, it's probably not going to matter that much. In fast pace gaming, you will not notice much of the graphical detail to begin with anyway - and in movies, you can always move your chair further away. In generally though, I think 27GL850 sound like a lot more reasonable option.

@e22bigsorry if I mention you but you're one of the few who answered.

And if we take into consideration my current monitor is a 27" 1360x768 (very low pixel density at 58ppi), will I notice the difference between the 2 "jumps" (82ppi 34" vs 108ppi 27")? Cause another reply said UW is worth it, even at FHD+. Thinking about it, it's a larger FHD monitor...

Pretty sure you will notice it - larger screen not only make you see less pixel per inch but also make you see more detail of the image, so every quality losses became more noticeable

 

But then, I am few of those people who enjoy 4k extra sharpness over 1440p so this may also the result of my personal opinion. If you are on 1360x768 27inch screen before you may not feel too bad about it. And if your kind of workflow require a lot of multitasking, getting an ultrawide may work out well for you (just try thinking about using a 45 inch 1080p TV as a desktop monitor, yes, the image won't look as good at a normal distance but that extra space you get is massive - and ultrawide is a lot more ergonomic than TV)
