Drive stripping concernes

So, I'm getting a new laptop, and I decided to do with two 1tb ssds rather than a single 2tb one since it's cheaper, and now I'm wondering, if I decide to stripe them together, will it erase everything on the drive? Like os and everything? Or just everything on a specific partition?
