I would go with the 3900x any day, its straight up got 50% more cores. But thats just me

3900X + Asus X570 Prime-P any day over the Intel combo.

You can keep your current parts, but the only thing I'd change is the case l, and get an airflow case Fractal Design Meshify S2 or the CM 500 series (H500, H500P, H500M). There won't be any bottlenecks, the GTX 1080 is still a strong card and I wouldn't upgrade it until the upcoming Nvidia 3000 series and AMD RDNA 2 GPU's. If anything else I'd consider a PSU upgrade later on.
