All of this comes to around AU $6950 +/- excluding shipping costs

Is it worth it??

“Worth it” gets hard with all the RGB.   There’s a whole lot of convenience stuff as well.  Modular PSU, “gaming” versions of stuff.

 

a bang/buck system that would deliver similar performance at a lower price could be done.  It wouldn’t be nice and shiney looking though.

Not a pro, not even very good.  I’m just old and have time currently.  Assuming I know a lot about computers can be a mistake.

Overkill? But you only went with an RTX 2070 super? 

 

At a $7500 budget, you can clearly get even better performance by a long shot, as @Herman Mcpootismade

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B
