I want to hook my xbox up to an apple thunderbolt display, any ideas on how to do it?

Yeah, No. I don't think you could do it, especially because Xbox=Microsoft... Apple=well, Apple. But some smart people on the forums might find out some way to help you, so ignore me!

No you cant. HDMI cannot carry data nor power and cant be adapted to Thunderbolt
