Wireless compromises sound quality and true 3D audio is sent over stereo. Virtual 7.1 just converts positional audio into stereo 3D for games/programs that didn't bother to do it themselves. True physical 7.1 uses tiny speakers and sucks, a lot, you don't want it. Honestly, if quarantine wasn't a thing I'd suggest going to the local hifi/audio store and just trying on a bunch of headphones and finding the one that's best sounding/most comfortable to you but failing that the HD6xx is a stellar set of headphones as are most of the other massdrop offerings (like the BEYERDYNAMIC DT 177X), the DT990s are very well loved here also BUT in the end it only matters how they sound to you. Z reviews on youtube is prettymuch the go-to for reviews on headphones in your price range so check him out if you want to see what other people enjoy.

If you're really a stickler for wireless your options are reduced greatly and I know very little about that area and can't be much help.
