I am currently planning my first ever build. For the graphics card I am not quite sure if I should pick ASRock Radeon 5600XT or the Asus ROG Strix Vega 64. Or is the Radeon 5700 so much better, that the additional cost is worth it.

The rest of the build is:

 

Edit: The 5700 version would either be by Asus or the MSI Evoke GP OC

im pretty familiar with german prices so I'd like to also comment on your psu choice.

a lot better & also the same price. 

So back to the GPU. Unfortunately you havent mention a budget.
So if you wanna go for used you could consider following gpus : 
- Vega 64
- 1070 Ti
- 1080

New;  there is not a lot to say because amd gpus are priced very well in germany : 
- RX 5700
- RX 5700 XT

If you ever want to stream using nvenc : 
- 2060 super
- 2070 super

The Vega 64 would be better. GTX 1080 levels of performance at base, but a strix version, with a better cooler and higher clocks, would easily outperform a 5700.

I WILL find your ITX build thread, and I WILL recommend the SIlverstone Sugo SG13B

I don't want to get used GPU's as it is too unsafe for me, but the Vega 64 I found is brand new.

At this point a new Vega 64 isnt worth it anymore.

Probably just buy a 5700 or 5700 xt

Should get significantly better CPU performance with the extra 200mhz and the faster memory with the lower latency for the same price (3733 C17 vs 3600 C20)

No reason to buy mechanical drives anymore, and I doubt you'll need more than a terabyte of space. Found an NVMe drive for good measure.

Case is subjective but I do think this one's better. 

I agree that overspending on a power supply is generally a good idea, but this one is plenty reliable.

I often heard now, that there is not much of a difference between the performance of these CPUs and that you just can overclock the 3600 non-X to the same clock speeds as the 3600 X.

I will check the RAM out, but I found much better pricing for the Vengeance.

I will need the Storage because I do photograpy in my free time and have like 500 GB of photos right now.

Might be, but I like the look of the Corsair really much and heard good things about the Corsair case.

Thank you for the reccomendation. I chose the Corsair supply due to other builds and recommendations from other members of the forum, but i will check yours out.

If your budget is around €300 and you don't mind the kinda loud cooler you probably should get this: MSI RX 5700 Evoke GP OC

 

Regarding the PSU this is a good option if you want a semi modular one: be quiet! Pure Power 11 CM 500W you can either save €5 for the non-semi modular 500W one or get the 600W for the same price. There are some other options like the BitFenix Formula Gold 650W for €80 and some others that are cheaper if you decide to get something that might be slightly worse to save some money.

I was going to recommend the Supremo L2 as a cheaper alternative(or the FM/M2 as similar priced alternatives) but this review on ComputerBase made me not so sure about them, the lack of OCP and OTP plus not being able to reach the advertised efficiency made me think twice on wherever it would be worth it, ideally someone that knows more about PSUs would say their opinion on this and possibly give some cheaper alternatives.

As the Corsair PSU is from a well known Company I think I'll stick with the Corsair PSU. Also the beQuiet PSUs you mentiond are even more expensive due to shipping costs.

That Corsair PSU is good so that is ok. Just make sure to avoid ASUS AMD cards, they often have huge problems and perform worse than equivalents.
