I am willing to spend around 200 dollars on storage and there is a few storage configurations I can go with

1. a 2tb high end sata 3 ssd

2. a 1 tb pcie gen 3 nvme ssd with a 2tb hard drive

3. a 500 gig pcie gen 4 nvme ssd with a 2 tb hard drive 

Which do you think is the best for a person who doesn't use much storage or considering that should I just save some money and go with a different configuration?

So i advice to wait for the current pandemic to fade,And nowdays hard-drives are faster than ever before and good price/capacity solutions so they are good for storing large games.

I recommend at least 7200RPM drives.
