Computer keeps randomly rebooting

I've been playing AC Origins for two days now and my computer keeps randomly rebooting. It doesn't restart, the screen freezes in the middle of the game, goes black and then I'm taken to the motherboard boot logo as if I had just turned on my computer right this moment. Don't know how to troubleshoot it. Here is a PC Part Picker link with all my parts:

I was thinking maybe my PSU was the problem, but after putting all my parts in PC part picker, I still had 250 watts left. Is it possible that all the other parts not listed in the link are taking up 250 watts? It's only been happening with this game. I've been playing Witcher 3 and didn't get any crashes.

I'm looking at HWMonitor right now and my max current temps are 63C on the CPU and 43C on the GPU

Try updating all drivers though device manager... start with gpu.

I'd update the AMD system drivers as well if you haven't lately...early versions were kind of buggy.  Latest BIOS update available on the MB is Nov. 2019.  Perhaps install that if you haven't already (build 1405).
