I am planning to buy a new PSU which will be this one: https://www.bequiet.com/en/powersupply/1543

And after buying it I will have some leftover cash which I will use to buy a new GPU

I have a 24" LED 1920x1080 Monitor.

 

My CPU: Ryzen 5 2600 (non-oc)

RAM: 2x8GB G.Skill Ripjaws V DDR4 3200Mhz

 

Can you help me choose?

I am currently thinking about buying something like a 1660 or 1660 Super.

Well, the most demanding game i currently have on my pc is Red Dead Redemption 2, i currently play it on my rusty old 1050 Ti on 35+ Fps on all LOW and Textures on ULTRA

560w 80+ silver PSU is more than capable of running a R5 2600 and either of those GPUs you're eyeing. Even if you took the extra $80 from the PSU and added it to your GPU budget to bump yourself up to an RTX 2060 range card, your PSU should handle it just fine.
