You need to have a PSU fit for a graphics card, not try to adapt molex into something it is not.

Even a 500W of sufficient quality nowadays has 2 6+2 pin connectors.

 

Maybe it will work on only the 6+2 pin? But the GPU expects a certain amount of power, so if it wants to push itself further and needs that 6 pin power you don't have plugged in, it can cause instability (BSOD's shutdowns, game crashes, etc)

The current psu I have is very good. I won't use GPU for heavy gaming, just going with mid or something.

You mentioned your PSU only has an 8 pin, while the PSU website mentions it has two 6+2 pin PCIE connectors.

Dont go the molex route; it isnt just about the psu being able to deliver enough power and connectors, its also abour wire gauge and quality of wire to pin connectors.

 

Molex to gpu adapters are a common and know cause for burning:

You need to buy a new power supply. I just looked Njoy up and it appears to be a cheap sketchy knockoff brand, so get a new one regardless.
