I upgraded old PC in October 2019 and everything was good with gaming until about a month back. Now Steam GTA V crashes PC with various blue screen reasons. I am a total loss why this would happen. I cannot install driver from early 2019 as it is NOT compatible with this version of Windows 10 Professional.
This is PC is for my son that has learning issues and I cannot help him. I am sure it is not a hardware issue.
System specs: AMD R5 3500 (auto overclocked via BIOS to 4.2GHz) with stock cooler, MSI X570 Gaming Wifi M/B, 2x8GB DDR4 RAM, 1TB NVMe, Steam games on 2TB 7200 RPM HDD, MSI GTX1080 8G GPU, 600w PSU.

Investigations leads me to think that the Rockstar Launcher is causing the problem - but I am not convinced.
PC runs normally in other situations.

Sounds like you didn't update your OS on a long time and support has ended,

Microsoft's support of older Windows 10 builds is non existent since they are control freaks that want to dictate what version you use and for how long.
