There's likely something broken and it's hogging up memory, which is likely causing an increase in disk activity (which is what the disk % is). Can you take a screen shot of Performance -> Memory?

Disk should be usage at 100% if your computer is fast enough - that means is utilize at his max speed. It's not GPU or CPU that is used more on heavy operations. Disk read and write is always at maximum speed - it will be strange if disk has something like 20% speed usage (except when you download something and your internet speed is not fast enough). And when system uses disk for installing updates, it uses it at max (because why not?).
