First of all, USB-C is just the connector. It does NOT specify the speed. You can have USB 2.0 - devices with a USB-C connector. Secondly, even USB 1.1 is plenty for mice and keyboards, so no.

The data transfer rate and input lag, while often squished in the same category of "speed," aren't really related to each other. You could have a connection speed of 1TB/s, it would not, by itself, help your latency at all
