That's because 1680x1060 isn't 16:9.

Does it switch to 1680x1050 when you set it to 120Hz at 1600x900 or is there something else I'm missing?

Yup. The resolution is 1600x900 but the active signal resolution automatically changes to 1680x1050 when I change it to 120hz

Try setting a custom resolution.
