I use Crysis 3 to test my OC. Play about 10 minutes runnin and gunnin on a map with loads of enemies, and blow up every barrel you can find. If it doesn't crash ,then OC is good. I have had it stable on Crysis 3 but crash in BF3 sometimes, but that was with beta drivers, hasn't done that since. So, keep in mind, some drivers will be more stable with OC than others. With good water cooling, you should be able to set the voltage to the absolute manufacturer's rated max voltage.

My 290 runs at 1123 stable in all games, only at 1400 on the memory but could push it higher. (but i see no reason to because there was little return to justify the means)

Use GPU 3D test in OCCT. it's the best stress test tool you can get. It even has an error detector built in.

At least bf3 was pretty good for that, my gpu were stable in furmark but after some playing in bf3 it would crash. And at least you get something to do while stresstesting. :D
