WTF... how do you even fit an intel stock cpu cooler in there?

Either that, or remove the optical bay bracket.

Have you actually built that case or are there any builds out there you can point out? It definitely seems interesting. It's like a DIY nuc except you can actually put a sata ssd instead of msata and you get your choice of motherboard and cpu instead of just getting some ulv mobile cpu.

nice.. I'm a little disjointed by the size of the external PSU though. I was hoping for a more laptop sized power brick.

That one is pretty large because it's 150W. If you're just using an APU system you won't need that much, and it is compatible with any Pico PSU solution, some of which have smaller power bricks and range between 90W and 150W.
