Both have their pros and cons.

The 3600 is superior in many ways but if you like the idea of having a 8 core processor on a budget the 2700 is not too bad.

If you are worried about compatibility go for the 2700, if you want to deal with AMD for a loan processor to upgrade the BIOS the 3600 will be better.

Looking at Geekbench 4 benchmarks for both you will see that the 3600 seems to perform just as well as the 2700 in multi-core loads.  At lease in the results found on the first page of search results for both CPUs.
